Persian Style Meatloaf



Persian style Meatloaf
Inspired by Feast From the Mideast

Prep time: 5 minutes
Baking time: 1 hour

Serves 4-5

Ingredients:
½ cup fresh parsley
½ can (19oz/540g) chickpeas, drained and rinsed
½ large onion cut into chunks
3 cloves garlic
1 ½ lb/ 700g ground beef (lamb would be lovely too)
Freshly ground black pepper and sea salt to taste
½ tsp ground turmeric
2 eggs, lightly beaten

Directions:
1. Preheat the oven to 400°F/200°C..

2. Combine the parsley, garlic, onion and chickpeas in a food processor and process for a couple of minutes until all the chickpeas have been mashed.

3. In a large bowl, combine the everything else, add the chickpea mixture and blend. Form into a loaf and place in a loaf pan.

3. Roast for about 1 hour.

Slice and serve with sweet potatoes or cauliflower and some sautéed green vegetable.
