Green, Green, Very Green Salad

    Green Green Very Green Salad

    Prep time: 10 minutes
    Serves 2

    Ingredients:
    1 Romaine heart, coarsely chopped
    1-2 Belgian Endives, coarsely chopped
    1/2 fennel root, thinly sliced
    1/4 - 1/2 cup fresh parsley, chopped
    1/4 - 1/2 cup fresh cilantro/coriander,chopped
    1/4 cup fresh mint,chopped
    2 tbsp fresh oregano,chopped
    Dressing:
    1-2 tbsp extra virgin olive oil
    1-2 tbsp rice wine vinegar (I like seasoned, it's a little sweeter)
    salt & freshly ground black pepper

    Directions:
    1. Combine all the salad ingredients in a large serving bowl and toss.

    2. In a small bowl combine the dressing ingredients. Mix and add to the salad.

    3. Toss and serve with some grilled or broiled chicken, meat or fish.
