Fatoush - Lebanese Salad

Fatoush – Lebanese Salad
Adapted from Feast From the Mideast

Prep time: 5 minutes
Serves 4-6

Ingredients:
I English (seedless cucumber), peeled and diced
1 box grape or cherry tomatoes or 3 vine ripened tomatoes, diced
3 green onions, white and light green parts only, thinly sliced
½ cup Italian/flat leaf parsley, chopped
2 romaine hearts, chopped
3 pita breads, toasted and broken into bite size pieces (Don’t leave this out! Soooo good!)
Dressing:
2 cloves of garlic, minced
Juice of 1 large lemon
Equal amount of extra virgin olive oil
Freshly ground black pepper
Bunch of fresh mint (about ½ cup), coarsely chopped. You can use 1 tsp dried mint, but I’d only do it if you can’t find fresh.
1 tsp ground sumac

Directions:
1. Combine all the dressing ingredients in a small bowl.

2. Add the rest of the ingredients, to a large serving bowl, add the dressing, toss, taste for seasoning and serve.

That is looking great indeed. Have to look out for sumac here. I die for salads! :))
