Mixed Greens with Miso Dressing

Mixed Greens with Miso Dressing
Adapted from Quick Vegetarian Pleasures-South Beach Diet Friendly
Prep Time: 5 minutes

Serves 4

Ingredients:
1 cup mixed greens/person
Red pepper slices, red onion slices, etc…whatever you like with mixed greens.
Dressing: (makes 1 ½ cups)
3 tbsp miso (rice/white, or barley/red)
2 large cloves garlic, minced
2 tbsp cider vinegar (or red wine vinegar)
1 ½ tbsp sesame oil
¾ cup canola or vegetable oil
1/3 cup water

Directions:
1. Blend miso, garlic, vinegar and sesame oil in a blender or food processor until smooth..

2. With the machine running, pour in the oil and, once it’s emulsified pour in the water. It should be chilled for a while before serving, but we didn’t have time. It still tasted delicious.

3. In a large serving bowl, combine the mixed greens plus whatever else you’d like in a salad – red pepper slices, red onions, ….Toss with some of the dressing.
