Mushroom Surprise Meatloaf

Mushroom Surprise Meatloaf
Prep time: 10 minutes
Cooking time: 60-75 minutes

Serves: 6

Ingredients:
2 cups cremini mushrooms, sliced
2 tsp thyme leaves
Pepper to taste
1 tbsp olive oil
2.3 lb/1kg ground beef (chicken or turkey works too)
2 tbsp each fresh Italian/flat leaf parsley, oregano, mint, coarsely chopped
2 tbsp tangy, spicy mustard (this time I used Kozlik’s lime & honey Mustard) plus ¼ - ½ cup for glaze
1 small onion, finely chopped
¼ cup oatmeal (healthier than breadcrumbs)
1 egg, lightly beaten
3 large cloves garlic, minced
Juice of ½ lemon

Directions:
1. Preheat oven to 325°F/170°C.

2. Add 1 tbsp to a small non-stick skillet and sauté mushrooms with thyme over medium high until mushrooms are well-browned. Set aside.

3. In a large bowl, blend all the other ingredients together. Place half the mixture into an oven-proof loaf pan. Evenly layer the mushrooms over the meat and then top with the rest of the mixture. Spread a little more mustard on top (that’s the glaze).

3. Bake for about 45-60 minutes.

Meatloaf is one of the foods my husband doesn't like, so unfortunatley, I don't have any words of advice. But those sweet potatoes - I'm gonna have to try those!!

Not sure what to suggest. The list of ingredients sounds like it would be good. I might chop the mushrooms finely and add them to the meat mixture. But that's my bias towards meatloaf that's not too chunky. I am a big meatloaf fan but don't make it often enough. The oatmeal is an ingredient that I'd definitely use. And for the "not chunky" preference, I buzz my oatmeal in the food processor a bit.

I was just looking for something to do with mushrooms and my hubs just suggested meatloaf the other day... I can't wait to try this!!
