Banana, Pecan & Chocolate Chip Bread

Banana & Pecan Bread with Chocolate Chips
Inspired by Sunbeam Café Series Ad

Prep time: 5 minutes
Bake time: 1 hour or so

Makes 1 loaf

Ingredients:
½ cup unsalted butter (even when I use a food processor I like to have the butter soft)
2 eggs
2 very ripe bananas
2 cups all purpose flour
1 tsp baking powder
1 cup sugar
¾ cup pecan pieces
¾ cup chocolate chips

Directions:
1. Preheat the oven to 350°F/170°C and line a loaf pan with parchment paper. I like to do the paper in 2 strips and have them overhang the pan for easy removal.

2. Place the butter and the bananas in a food processor and process until smooth. Add the flour, baking powder, sugar and pecan pieces and process until smooth. It doesn’t take very long. Add the chocolate chips and mix by hand before pouring the mixture into the loaf pan.

3. Bake in the center of the oven for at least an hour. When the loaf is ready, a toothpick tested in the middle of the loaf should come out clean; the top will have a gorgeous golden glow and a crack down the center.

4. Let it cool in the pan on a wire rack for at least 10 minutes before slicing.
