Shrimp, Chorizo & Mushroom Pizza
Prep time: 5 minutes
Bake time: 5 minutes or less (just enough time for the cheese to melt)
Serves 4
Ingredients:
4 small pita breads (I used whole wheat)
12-16 large shrimp
1 smoked chorizo sausage, sliced
4 slices red onion, sliced thin
2 smallish Portobello mushrooms sliced
1 tsp spicy seasoning…cajun, curry…your choice
1 tbsp fresh oregano or cilantro, chopped (what ever works best with your seasoning)
1-2 tbsp extra virgin olive oil
1 small clove garlic, minced
Grated Italian blend cheeses (or Mozzarella, Provolone…) (amount depends on you…some people like a little, some like a ton)
Parmesan cheese
Directions:
1. Preheat the oven to 425°F/220°C.
2. Pour the olive oil in a small bowl and add the minced garlic. Brush some on one side of the pita breads lightly. Place them on a foil lined cookie sheet and set aside.
3. In a skillet, heat a little olive oil and add the onions, mushrooms, chorizo, and seasoning . Toss of 3 minutes or until the mushrooms and onions are almost done. Add the shrimp and herbs and sauté until the shrimp turn pink (3 minutes or so, depending on the size).
4. Spread the shrimp mixture over the pitas and add the cheese on top and sprinkle with a bit of Parmesan (it adds a salty flavor and turns golden more quickly than the other cheeses).
