Wild Blueberry Salsa

Blueberry Salsa

Prep time: 5 minutes
Marinating time: at least 1 hour up to 2 days in the fridge
Serves 8

Ingredients:
2 cups wild blueberries (I used fresh, but if you plan on using frozen, thaw them first)
½ cup red onion, diced
1 jalapeno pepper, seeded and minced (I didn’t have one handy, so I just used ¼ tsp red chili pepper flakes)
½ red bell pepper, chopped fine
3 tbsp fresh cilantro/coriander, chopped
¼ cup mixture lime & lemon juice
Pinch of cinnamon

Directions:
1. Combine all the dressing ingredients in a medium bowl (blueberries last so as not to crush them..

2. Refrigerate for at least an hour to blend the flavors.

wildblueberries.com suggests serving with corn chips or use as a relish with meat & poultry. We tried it over grilled steak and I think it will taste much better over seafood….shrimps and scallops – look out!
