Asiago & Herb Muffins
Hands-on time: 5 minutes
Total Baking time: 25 minutes
Makes 12-14 muffins
Ingredients:
2 cups flour
4 tsp baking powder
¼ tsp salt
2 tsp sugar
1 egg, lightly beaten
1¼ cup milk
¼ cup melted butter
1 cup Asiago cheese, shredded
1 tbsp fresh rosemary, chopped (oregano or thyme would be lovely too)
Directions:
1. Preheat oven to 375° F/190°C and grease muffin tins.
2. In a large bowl, stir together flour, baking powder, salt and sugar. In a smaller bowl, beat the egg, milk & melted butter. Add to the flour mixture just to combine. Use a fork. Do not beat! Stir in the cheese and herbs.
3. Spoon into the muffin tins. Do not fill to the top. They will rise during baking. Bake until they are golden.
4. Cool on a wire rack for a few minutes before removing from the muffin tins.
Serve them warm.

These look good. I like the sound of using the Asiago. I don't seem to get to use Asiago enough.
