Braised Brussels Sprouts with Caramelized Shallots


Braised Brussels Sprouts with Caramelized Shallots

Serves 4
Prep time: 5 minutes
Total Cooking time: 15 minutes

Ingredients:
1 tbsp vegetable oil
1 tbsp butter
1 pint (small basket from the market) Brussels sprouts, thinly sliced vertically
3-4 large shallots, thinly sliced
1 tsp brown sugar
Scant ¼ cup water
Dash balsamic vinegar

Directions:
1. In a non stick skillet, heat the oil and butter over medium heat. Gently, slowly sauté the shallots until they turn translucent and start to golden. Add the brown sugar and toss.

2. Add the sprouts and toss well. Sauté for a couple of minutes and then add the water. Toss, cover and cook over low for 4-5 minutes. They’re ready when they start to soften…way before they turn grey!
3. Add the balsamic vinegar, toss and serve.
