Grilled Haloumi on Rosemary & Olive Toasts


This is the simplest appetizer (or light lunch with salad) ever!

Have some Haloumi cheese in your fridge, some crusty, hearty bread to put it on and you're a star!

Prep time: 5 minutes
Fry time: 4 minutes

Ingredients:
Slices of hearty breads with crusty outsides and tender insides. (I love rosemary & olive bread or crusty sourdoughs). Slices should be about ¼" thick

Some good extra virgin olive oil for brushing on the bread before toasting.

Block of Haloumi cheese sliced into ¼" slices

Directions:
1. Place the haloumi slices in a cold grill pan and heat on medium-high for 3 minutes or until the underside is golden. Flip and repeat. The entire process takes just a few minutes so don't leave this unattended.

2. In the meantime, brush a little olive oil on the bread slices and toast them.

3. To assemble...just place the grilled haloumi on top of the toast slices and cut into bit sized (or two bite) slices.

4. Serve and enjoy.
