Leftover Pasta with Serrano Ham, Garlic & Parsley

Leftover Fusilli with Serrano Ham, Garlic & Parsley

Prep/Cook time: 5 minutes (plus pasta cooking if you’re not using left overs)
Serves 1-2 (or however much your leftovers will feed)

Ingredients
Fusilli Bucati pasta or (whatever your short twirly favorite is) or whatever leftover pasta you happen to have on hand
1 tbsp unsalted butter
1 tbsp extra virgin olive oil
2 large cloves garlic, minced
3 slices Serrano ham or proscuito, coarsely chopped
½ lemon - juice and zest
¼ cup fresh parsley, coarsely chopped
Grated parmesan cheese
Freshly grated black pepper to taste

Directions
1. Cook the pasta (or in my case, microwave the left over pasta that has no sauce).

2. Heat 1 tbsp olive oil in a large skillet and add 1 tbsp butter, stir a bit until the butter melts. Stir in the garlic and add the ham. Toss a bit and when there is that wonderful garlic aroma add the pasta and toss. Remove from heat and add the parsley, lemon zest and juice, cheese and black pepper to taste. Toss about and eat.

Wow, great recipe! Excellent results at home when I made it. I just replaced the ham by some Spanish iberico de bellota ham, also called black hoof or pata negra for an improved and more refine taste. Definitely one recipe to keep on my cooking book.
