Mideast Inspired Lamb Meatloaf
Prep time: 5 minutes
Cooking time: 45 minutes
2 lb/900 g lean ground lamb (or beef)
¼ cup toasted almond slices, finely chopped
½ cup packed fresh mint, chopped
2 large cloves of garlic, minced
1 egg, beaten
2 tsp ground cumin
salt & pepper
1. 1. Preheat oven to 350ºF/180°C.
2. In a bowl, mix everything together.
3. Form into a loaf and place in loaf pan. Bake for 45 minutes or until the center feels firm and the internal temperature (with a meat thermometer) registers 170ºF/77°C.
