Pistachio Wasabi Roasted Salmon

Pistachio & Wasabi Roasted Salmon Filets

Prep Time: less than 5 minutes
Roasting Time: 15-20 minutes

Serves 4

Ingredients:
4 salmon filets, skin on
½ cup pistachio nuts, shelled, toasted* and coarsely chopped
Wasabi Mayo (the proportions are up to you):
Lite mayo
Wasabi powder
Touch of Splenda

Directions:
1.Preheat the oven to 400°F/200°C

2. Coat the top of the salmon with some wasabi mayo and top with crushed pistachios. Roast for 15-20 minutes.

3. Serve extra wasabi mayo on the side and some simple steamed veggies.

*To toast pistachios…preheat the oven to 325°F/160°C. Spread the pistachios in a single layer on a rimmed baking sheet and bake until golden and fragrant – 7-10 minutes. Place the baking sheet on a wire rack and cool before chopping the nuts.

Simple and simply delicious.
