Roasted Sweet Potatoes & Shallots

Roasted Sweet Potatoes & Shallots

Serves 2
Prep time: 5 minutes
Cooking time: 20 minutes

2 small sweet potatoes, peeled and cubed (each piece about 1”)
2 -3 large shallots, peeled, quartered and split open
1 tbsp olive oil
2 tbsp balsamic vinegar
1-2 tbsp fresh thyme leaves (1 tbsp dried)
Salt & pepper to taste

1. Preheat the oven to 400°F/200°C

2. Toss everything together in a mixing bowl and then place in an ovenproof dish large enough to hold the vegetables in one layer.

3. Roast for 15-20 minutes, tossing occasionally until the sweet potatoes have caramelized and are soft.
