Gingery Snow Pea Stir Fry


Hands-on time: 5 minutes
Cooking time: 5 minutes

Serves 2

Ingredients:
2 cups fresh snow peas, just cut off the hard end (closest to the vine) and cut them in half
1 tsp canola oil
1 large garlic clove, minced
½” piece of fresh ginger, peeled and finely chopped
1-2 tbsp hoisin sauce
1 tsp sesame oil
1 tsp toasted sesame seeds

Directions:

1. Heat the oil, garlic and ginger in a non stick pan over medium high heat. When fragrant, add the snow peas and toss well. (less than a minute...you don't want the garlic to burn...very bitter!)

2. Add the hoisin and sesame oil, toss and continue to cook until the snow peas are a brilliant green..(3-4 minutes). If they are still too bitter, add a tsp or so of water, lower the heat and cover the pan. Let it steam for a couple of minutes.

3. To serve, place the snow peas in a bowl and sprinkle with toasted sesame seeds.
