Shrimp & Roasted Red Pepper Pasta

Shrimp & Roasted Red Pepper Pasta



Prep time: 20 minutes (time to boil the water and cook the pasta)

Serves 4

Ingredients:
8oz/250g short pasta (I used Strozzapreti this time, but penne or Farfalle would be great choices)
2-4 tbsp roasted red pepper pesto
1 cup cooked shrimp (normally I buy raw shrimp and just sauté them with a little olive oil and garlic until they are pink (3-4 minutes)
Pinch of red chili pepper flakes (optional)
Fresh parsley or basil, finely chopped (as garnish)

Directions
1. Boil pasta in lots of water with 1 tbsp salt for time specified on package. (anywhere from 3- 12 minutes depending on the type of pasta used)

2. Drain the pasta when it’s al dente and place in a large serving bowl. Add the cooked shrimp, pesto and fresh herbs. Taste for seasoning and add a pinch of red chili pepper flakes if you like a little spice with your pasta and fresh basil or parsley as a garnish.
