Zesty No- Cook Mushroom Sauce

Pasta with Nigella’s No Cook Zesty Mushroom Sauce
Inspired by Nigella Express episode

Total time: 10 minutes
Serves 4

Ingredients
Your favorite pasta…this time I used a mix of “Wacky” pasta…different small shapes, different colors from the spinach and tomatoes because Boaz loves to pick up his food with his cute pudgy fingers
2 cups cremini mushrooms, thinly sliced
2 tbsp extra virgin olive oil
1 small clove garlic, minced
Zest & juice of 1 large lemon
1-2 tbsp fresh thyme leaves
¼ tsp red chili pepper flakes (optional)
1 cup cooked chicken, cubed or shredded (optional)
½ cup pasta cooking water
Grated Parmesan cheese (I like freshly grated Parmeggiano-Reggiano for this)
Salt & pepper to taste

Directions
1.Cook the pasta as directed.

2. In the meantime, in a lovely serving dish, combine mushrooms, thyme, garlic, juice & zest and olive oil (plus chicken and/or chili pepper flakes if you’re using them) and toss.

3. Add the drained pasta to the “sauce” and add as much or as little of the pasta water as you like. Grate lots of Parmesan

4. Once the pasta is cooked, drain and place in a serving bowl and toss with the sauce, taste for additional seasoning and serve with lots of grated cheese.

Tonight our dinner is set, but the sight of your pasta dish made me crave for some MMmmmmmm. I'll try your recipe with some coloured flat spaguetti (don't know the proper name) I have left :D
