Simple Salmon with Almonds

Prep time: 5 minutes
Cooking time: 6-8 minutes or until the fish is pink but very juicy)
4 salmon fillets (6oz/170g each), skinned
¼ cup sliced almonds
1/3 cup dry sherry
1 tbsp orange juice
1 tbsp fresh chives, chopped
1. Heat a nonstick skillet coated with cooking spray over medium heat. Add the salmon and cook, turning once, for 6 minutes or until opaque. Remove to a serving plate. (I covered the salmon with foil to keep it warm).
2. Add the almonds to the skillet and cook for 3 minutes or until lightly toasted. Stir in the sherry, orange juice and chives. Cook for 2 minutes or until heated through. Drizzle over the salmon and serve.
