Curried Meat Loaf

Curried Meatloaf
Inspired by a spicy meatball recipe on Jam & Clotted Cream

Prep time: 5 minutes
Cooking time: 45 minutes
Serves 4-6

Ingredients:
1½ lb/450 g lean ground beef or lamb
½ cup oatmeal (not the instant kind)
1 onion, finely chopped
2 large cloves of garlic, minced
2cm (1”) fresh ginger, grated
1 tbsp ground coriander
2 tsp cayenne pepper
1 tsp ground cumin
½ cup packed fresh oregano and Italian parsley, chopped

Glaze:
3-4 tbsp Jalfrezi curry paste ( a mild, sweet/sour curry)
Enough water to dilute it enough to be able to brush it over the meat loaf

Directions

1. Preheat oven to 350ºF/180°C.

2. In a bowl, mix all the ingredients with the exception of the glaze.

3. Form into a loaf and place in loaf pan. Spread a generous amount of glaze over the meatloaf. Bake for 45 minutes or until the center feels firm.

I love to serve this with roasted root vegetables, like beets, carrots and onions sprinkled with some fresh thyme leaves, a little salt & pepper and a drizzle of olive oil baked at the same time as the meatloaf.
