Hong Kong Style Shrimp Noodles with Zucchini, Chili Peppers & Basil
Inspired by a Donna Hay Magazine, Autumn 2008 recipe
Prep/Cook time: 10 minutes
Serves 2
Ingredients
3-4 bundles Hong Kong Style Shrimp Noodles ( the package I bought had the dried pasta in folded bundles)
1 medium zucchini, cut in 3 pieces and grated lengthwise in a food processor, if you have one
½ - ¾ cup fresh basil leaves, coarsely chopped
Juice of ½ lemon
½ -1 tsp dried red chili pepper flakes
2 tbsp or so of olive oil
¼ - ½ cup grated Parmesan cheese
Freshly grated black pepper to taste
Directions
1. Cook the pasta in boiling water…it only takes 2-3 minutes.
2. While the water is coming to a boil, grate the zucchini, chop the basil and have the oil, cheese, lemon juice and pepper handy.
3. Once the pasta is cooked, use tongs to remove the pasta from the water, placing it in a large serving bowl. Add the rest of the ingredients, toss, taste for seasonings and serve.
My Honey was shocked at how quickly the whole thing took to put together. He barely had time to set the table!
