Roasted Butternut Squash with Sherry Vinegar

Prep time: 10 minutes
Roasting time: about 45 minutes (check after 30 minutes to see if they are cooked through but not mushy)
Serves 4-6

1 large butternut squash
3 Tbsp sherry vinegar
Avacado or vegetable oil
Freshly ground pepper & sprinkling of kosher or sea salt

1.  Preheat the oven to 400ºF/200ºC

2. Peel the butternut squash and chop it into large cubes.  Toss the cubes in oil and place in the roasting pan or lined rimmed baking sheet.

3. Splash the sherry vinegar over the squash and season with salt and freshly ground pepper.

4. Roast in the oven for around 30 minutes or until done.  Tender but not mushy.
