"Israeli" Salad

"Israeli" Salad - no idea where it got it's name, but that's what my family calls it.
Prep time: 5 minutes

Serves 4

Ingredients:
I English (seedless cucumber)
1 sweet red pepper
½ Vidalia or other sweet onion
1-2 cups yellow grape tomatoes, halved
½ cup pitted Kalamata olives (optional)
½ cup feta cheese, crumbled (optional)
1 cup baby arugula
¼ cup fresh oregano, chopped
Salt and freshly ground black pepper to taste
2 tbsp extra virgin olive oil
2 tbsp champagne vinegar or lemon juice
1 clove of garlic, minced

Directions:
1. In a large bowl, cut the cucumber, red pepper and onion into large chunks (you can add your favorite crunchy vegetables too.

2. Add the rest of the ingredients, toss, taste for seasoning and serve.
