Roasted Cauliflower with Sage & Rosemary

Roasted Cauliflower with Fresh Sage Rosemary

Prep time: 5 minutes
Roasting time: 10-15 minutes

Serves 4

Ingredients:
1 large cauliflower, cut into florets
2-3 tbsp extra virgin olive oil
2 tbsp fresh rosemary, chopped
1-2 tbsp fresh sage, chopped
2-3 cloves garlic, minced
1/4 cup grated Parmesan cheese, (freshly grated is better, but purchased grated is okay too)
Freshly ground black pepper and sea salt to taste
Juice of half a lemon

Directions:
1. Preheat the oven to 400°F/200°C..

2. In a large bowl, toss the cauliflower pieces,olive oil, rosemary, sage and salt and pepper. Lay them in a single layer in a lipped baking pan (I cover mine with parchment paper for easy cleanup).

3. Roast for about 10-15 minutes. The cauliflower should be golden underneath (no need to turn them during the roasting) and tender but not mushy).

4. Just before serving toss them with the parmesan cheese and lemon juice. Adjust salt and pepper if you need to.

This is a great side for meat loaf, roast chicken or any grilled meat or fish.
