Easiest Meat Loaf



Easiest Meatloaf Ever
Prep time: 5 minutes
Cooking time: 45 minutes

Serves: 4

Ingredients:
1½ lb/ 680 g ground beef (chicken or turkey works too)
¼ cup Italian/flat leaf parsley, chopped
¼ cup other chopped herbs (oregano, thyme, basil….)
2 tbsp tangy, spicy mustard (this time I used Kozlik’s Blonde Mustard – made with beer and whole mustard grains)
1 medium onion, finely chopped
½ cup oatmeal (healthier than breadcrumbs)
1 egg
1-2 cloves garlic, minced
Salt & pepper to taste


Directions:
1. Preheat oven to 350°F/180°C.

2. Blend all the ingredients together in a bowl. Form into a loaf and place it in a non stick loaf pan (or spray with a little non-fat cooking spray). Spread a little more mustard on top.

3. Bake for about 45 minutes.

Nothing could be easier or more comforting after a hard, frazzled day!
