Couscous, Herb & Lamb Loaf
Inspired by Donna Hay Magazine, Winter Issue 28
Prep time: 10 minutes
Cooking time: 45 minutes
Serves 4-6
Ingredients:
2lb/900g ground lamb
1½ cup cooked couscous (I used 2/3 cup whole wheat couscous to 1 cup water)
1 cup EACH fresh oregano and basil, chopped
6 green onions/scallions, chopped
Juice of 1 lemon
salt & pepper
Directions
1. 1. Preheat oven to 350ºF/180°C.
2. In a bowl, mix all the ingredients.
3. Form into a loaf and place in loaf pan. Bake for 45 minutes or until the center feels firm.
I love to serve this with my new favorite mash – instead of potatoes, I use cauliflower.

I love it! All those fresh herbs! I'm afraid it will have to wait a another month or two until I have basil.....I could do oregano, thyme and chives, though....
