Asian Mango Salad

Asian Mango Salad
Inspired by LCBO's Food & Drink Magazine

Prep time: 5 minutes
Serves 4-6

1 ripe mango, cut into julienne strips
1 cup snow peas, also in julienne strips
½ cup green onions (scallions), sliced
3 cups mixed baby greens
1 cup baby beet greens (my favorite part – they are so sweet!)
½ - 1 cup toasted almond slices
Juice and zest of 1 large lime
2 tbsp seasoned rice vinegar
1 tbsp sesame oil
2 tbsp vegetable oil
1 tbsp hoisin sauce
1 tbsp soy sauce

1. Combine all the dressing ingredients in a small bowl.

2. Add the rest of the ingredients, to a large serving bowl, add the dressing, toss, taste for seasoning and serve.
