Gingery Kale Stir Fry


Gingery Kale Stir Fry
Adapted from the back of the package of Cut ‘n Clean Green Kale

Prep time: 5 minutes
Cooking time: 15 minutes

Serves: 4

Ingredients:
1 bunch kale leaves (stems removed) and coarsely chopped ( I bought a prepared 10oz/284 g bag)
1 tbsp canola oil
3 large cloves garlic, minced
2 large shallots, coarsely chopped
2 tbsp fresh ginger, grated
¼ cup water
2 tbsp soy sauce
1 tbsp toasted sesame seeds*
1 tbsp sesame oil

Directions:
1. Heat the oil in a large skillet. Sauté the shallots until they begin to soften and then add the ginger & garlic over medium heat for about a minute (just until fragrant, you don’t want it to burn or it will just taste bitter). Add the kale and toss. Add the soy sauce and water and stir until the kale has wilted but slightly crunchy (3-5 minutes). Keep checking for moisture at the bottom of the pan and add a little more water if necessary.

3. Spritz some sesame oil and sprinkle with toasted sesame seeds, toss and serve. (I bought some pre-toasted sesame seeds, but you can make your own simply by heating a non stick skillet over medium heat and adding the seeds. Shake the pan occasionally until the seeds start to darken and you can smell the aroma).
