Sautéed Green Beans & Caramelized Shallots
Serves 2
Prep time: 5 minutes
Total Cooking time: less than 10 minutes
Ingredients:
1 tbsp vegetable oil
½ pint (small basket from the market) green beans, stem side trimmed
2 large shallots, thinly sliced
2-3 tbsp water
¼ cup fresh basil, chopped or chiffonade (roll the leaves like a cigar and thinly cut across, giving lovely strips)
Salt & pepper to taste
Directions:
1. In a non stick skillet, heat the oil over medium heat. Gently, slowly sauté the shallots until they turn translucent and start to golden. (about 5 minutes).
2. In the meantime, steam the beans in a few tbsp of water in the microwave for about 40 seconds, just to start the cooking. Drain them and add them to the shallots. Toss and continue to sauté for 2-3 minutes. The beans should be tender but still bright green. Add the basil, salt & pepper and serve.
