Mashed Turnips with Thyme

Prep Time: 5 minutes
Cook Time: 10 minutes or until the turnips are soft (can be up to 20 minutes)
Serves 2
Ingredients:
½ head turnip
Chicken broth (enough to cover the turnips in the pot)
1 tsp dried thyme
Salt & pepper to taste
Directions:
1.Cut/chop the turnips into small pieces (the smaller they are the faster they’ll cook).
2. In a small pot, add the turnips, thyme and enough chicken broth (you can dilute it with water, but the broth really adds a wonderful sweetness) to cover the turnips. Bring to a boil and reduce the heat to a simmer. Cover and cook until tender and most of the broth absorbed. Drain, mash and add salt and pepper to taste.
This is a great side for any roasted or grilled meat or chicken dish. I did it with the Marinated Strip Loin Steaks…perfect!
