Zesty Chicken Meatloaf

Zesty Chicken Meatloaf
(Sun-dried pesto and onions make it moist without breadcrumbs for South Beach Diet)


Prep time: 5 minutes
Cooking time: 45 minutes (or until a meat thermometer reads 180°F/82°C)

Serves: 4

Ingredients:
1 small onion, finely chopped
1 large clove garlic minced
1 large egg
2 tbsp sun-dried tomato pesto
1½ lb/ 680 g ground chicken
1 tbsp tangy, spicy mustard (this time I used Kozlik’s Lime & Honey Mustard)

Directions:
1. Preheat oven to 350°F/180°C.

2. Blend all the ingredients together in a bowl. Form into a loaf and place it in a small loaf pan. Spread a little more mustard on top.

3. Bake for about 45 minutes.
