Tribute to Babies Pasta
Prep time: 5 minutes
Cooking time: 10 minutes (plus time to boil the water)
Serves 4-6
Ingredients:
1 box mini-farfalle (16oz/454g) ( I used Barilla Farfalle #65)
11oz/340g frozen cooked baby shrimp (112-150 per package)
1-1½ cups frozen baby peas
5oz/140g goat cheese
Zest & juice of 1 lemon
Salt & freshly ground black pepper to taste
A little of the pasta cooking water if needed
Directions:
1. Bring the salted water to a boil in a large Dutch oven and add the pasta. Cook 1 minute less than directed.
2. Add the frozen shrimp and peas to the pasta and cook until the pasta is al dente (about another minute).
3. Place the goat cheese in a large pasta serving bowl and using a slotted spoon, add the pasta, shrimp and peas. Allow some cooking water to join the pasta. Add the lemon zest and juice along with salt and pepper. Toss, taste and add any additional seasoning to taste.
