Chickpea Salad with Lemon, Parmesan & Fresh Herbs

Prep time: 5 minutes Can be made ahead or eaten right away
< Serves 2- 4

1 (19oz/540ml) can, chickpeas, rinsed & drained
2 tbsp fresh basil, chopped
2 tbsp fresh flat leaf/Italian parsley, chopped
2 tbsp fresh lemon juice
1-2 tbsp extra virgin olive oil
1 clove garlic, minced
¼ cup freshly grated Parmesan cheese
Pinch of kosher or sea salt

1. Combine all the ingredients in a large bowl. Toss, taste & adjust for seasonings.
