Roasted Sesame Salmon Filets

Roasting Time: 20 minutes
Serves 4
Ingredients:
4 salmon filets, skin on
Marinade:
1 tsp sesame oil
2 tbsp sesame seeds, toasted
4 tbsp soy sauce
1 tbsp Mirin (rice wine – you can substitute some sherry if you can’t find Mirin)
1 large shallot, chopped
2 cloves garlic, minced
1 small piece of fresh ginger (about 1”), chopped
Directions:
1. Combine all the marinade ingredients and pour over salmon fillets in an oven-proof baking dish. Let the fish marinate at room temperature for 30 minutes or so.
2. Preheat the oven to 400°F/200°C
3. Roast the salmon for 20 minutes or so, spooning marinade over the top occasionally.
4. Broil for 3-4 minutes to crisp the top.
